Greek Salad.


Again not my own picture ( I wanted to take one of my salad, but forgot and then remembered after I was almost done eating it :(

You will need:

1 chicken breast
1 can chickpeas (drained and rinsed)
Lettuce
1 tomato
1/2 cucumber
small can of sliced beets (drained)
handful of kalamata olives
as much crumbled Feta as you want
Peppercinis if you have them
EVOO
1 Lemon
Oregano

What to do:

1. Preheat a pan over medium heat with some EVOO to sautee chicken.
2. Cut chicken in half length wise (same as chicken parm) to get to large but thin pieces.
3. Season with salt and pepper and cook for about 5 min on each side ,until no longer pink.
4. Cut tomato and cucumber in decent sized chunks.
5. Put lettuce on a plate and arrange vegetables, olives, chick peas, and feta in little piles around the plate, or all mixed together over the whole thing, whatever tickles your fancy.
6. Cut chicken in strips when done and put in the middle on top of the lettuce.
7. Whisk EVOO, lemon juice (and zest if you have a zester), and oregano, salt and pepper together for the dressing then drizzle over salad. (or use Greek dressing if you have some in the fridge :):)
8. scarf and enjoy!
