corn fritters.

These are quick and easy and more yummy than I would have imagined!! Now, you will need a deep fryer or some oil in a pan (probably at least 1 in.) But I PROMISE they are worth it :)

You will need:

1 8.5oz box of corn muffin mix (I used Jiffy)
1/2 cup flour
1/2 cup milk
1 egg
1/2 stick butter, melted
1 cup frozen corn
1/2 cup chopped scallions
vegetable oil/canola oil (enough for frying) heated to 365 degrees (haha what a great number :)

STEP ONE: Whisk muffin mix and flour in a large mixing bowl.

STEP TWO: Whisk milk, egg, melted butter together in a separate bowl.


STEP THREE: Mix wet ingredients into dry ingredients.

STEP FOUR: Mix in corn and chopped green onions.

STEP FIVE: Drop tablespoonfuls into oil and fry for about 3 minutes. You may need to rotate them in the oil. When they are golden brown, scoop out and lay on a baking sheet lined with foil and sprinkle with salt. You will have to do a few batches and this does make enough for 4.

STEP SIX: Use sour cream, salsa, bbq sauce, or honey (yes we tried them all) to dip them in and be prepared to enter heaven!

  2. I had never made them and had no idea how they would turn out, it was a very pleasant surprise at the end of the day!
