vegetarian stuffed poblanos.

I made this dish the night before last and it ended up being SO good that I had to share, despite the fact that I had no pictures (hence the courtesy of photo above :)

You will need (serves 4):

4 poblano peppers
1 cup cooked rice
1 can fire roasted diced tomatoes (14.5oz)
1 can black beans (drained and rinsed)
4 oz shredded cheddar cheese
1/2 cup salsa
1 tbsp chili powder
1/2 tsp garlic powder
salt and pepper to taste
hot sauce to taste

What to do:

1. Preheat oven to 350 degrees.
2. Cut peppers in half length wise and scoop out seeds.
3. Mix seasonings, rice, beans, tomatoes and hot sauce together to make stuffing.
4. Spread 1/2 of the salsa on the bottom of a large rectangle baking dish.
5. Fill each pepper half with stuffing and place in dish.
6. Cover with remaining salsa and cheese.
7. Bake for 30-35 min. (longer if you want your peppers cooked more, this leaves them slightly crunchy).
8. Broil for 1-2 minutes to brown cheese.
9. Enjoy! I served them with corn muffins (cheap and easy from a box!)
