planet eat.

this recipe is a long time favorite and my Mom has been making it for years. A friend's Mom passed it on to her and she has since handed it out to myself and a few friends. The recipe is for a large batch (she makes it for Christmas Eve) great for bbqs and gatherings. But it can also be cut in half for family dinner or to keep in the fridge to munch on :)

You will need:

1/2 bag baby carrots
1 pkg. mushrooms, cut in half
1 small jar green olives, drained
4-5 celery stalks, cut into 1-2" pieces
1 head broccoli, cut up
1 can black olives, drained
1 pint cherry tomatoes
1 bunch green onion, cut into 1-2" pieces
2-3 garlic cloves (minced)
1 1/2 cups canola/vegetable oil (do not use olive oil, it will turn solid in the fridge)
2/3 cup cider vinegar
2 1/2 tbsp. salt (it sounds like a lot but do not waiver, we have tried and it does not turn out well)
1 1/2 tsp. sugar
1 1/2 tsp. pepper





What to do:
1. Mix all non vegetable ingredients including garlic together to form the dressing. I find a whisk works best.
2. Mix the dressing with all the veggies except green onion and tomatoes in a large bowl or pyrex dish. stir really well to coat.
3. Marinate in the fridge for 8-12 hours. stir it around every few hours to recoat. add in onion and tomatoes for the last 2 hours.
4. Serve and enjoy these insanely good marinated vegetables :)
